4 cups of zucchini, chopped
1 orange, chopped
2 tablespoons vegetable oil
1 carrot, shredded
salt and pepper
2 cloves of garlic
2 cups of water
˝ teaspoon honey

Makes 4 servings


1. Preheat oil and add the garlic. Sauté for 3 – 4 minutes and add the zucchini, water, honey, and salt and pepper. Simmer for 10 – 12 minutes. Leave to cool.

2. Blend the orange in the food processor, add the soup, and puree. Garnish with the shredded carrot and serve.
