Ingredients

500 grams raw almonds
300 grams cashews
1 teaspoon vanilla extract
2 tablespoons agave extract
2 shots espresso
8 dates
2 tablespoons vegetable oil
3 tablespoons cocoa powder
½ cup of coconut milk
1 banana
1 tablespoon rum

Makes 8 servings

Directions

1. Soak the almonds in water for 6 – 8 hours or overnight. Drain and blend in the food processor. Mix ½ of the almonds with the dates in the food processor. Shape and press the crust and freeze.

2. Mix the cocoa powder, half of the coconut milk, rum, espresso, 1 tablespoon of vegetable oil, 1 tablespoon of agave, and banana and blend. Layer the cream on top of the crust and freeze.

3. Blend the cashews and mix with 1 tablespoon of agave, 1 tablespoon of vegetable oil, half of the coconut milk, and vanilla extract. Layer the cream on top and freeze.
