3 tablespoons onions
2 tablespoons olive oil
3 cups of mushrooms
salt and pepper to taste
2 cups of baby greens
2 avocados
1 cup of roasted tomatoes
1 cup of roasted red bell peppers
4 tablespoons vegan mayo
1 tablespoon lime juice
4 wraps

Makes 4 servings


1. Slice the avocados and toss with lime juice.

2. Heat the olive oil and sauté the mushrooms and onions for several minutes. Season with salt and pepper.

3. Grill the wraps. Combine the mayo with the avocado.

4. Roll the wraps and add the filling. Start with the baby greens, then add the avocado and mayo mix, roasted tomatoes and red bell peppers, and onion and mushrooms. Slice and serve.
