4 avocados
2 tomatoes
3 tablespoons red onion, sliced
salt and pepper to taste
2 tablespoons chives
3 tablespoons sunflower or pumpkin seeds

Makes 4 servings


1. Toss the onion, salt and pepper, and tomatoes in a bowl. Season with fresh basil leaves. You may also drizzle with lemon or lime juice.

2. Use halved and pitted ripe avocados. Spoon the mix into the avocado halves. Garnish with sunflower seeds and chives. Another option is to add the sunflower seeds to the tomato and onion mix.
