2 cups of vegetable broth
4 cups of butternut squash, cubed
4 tablespoons vegetable oil
3 tablespoons onion, diced
1 cup of carrots, diced
salt and pepper to taste
2 tablespoons flour
1 apple, diced
Makes 4 servings
1. Preheat 2 tbs. of oil and sauté the onion until soft. Combine the carrots, onion, butternut squash, apples, and vegetable broth. Season with salt and pepper. Simmer for 40 – 45 minutes.
2. Leave to cool, and puree in the food processor.
3. Heat oil and add the flour, mix well. Add the pureed mix gradually and stir well. Bring to boil. Serve warm.
