Salmon Fillets Mediterranean Style
4 salmon fillets
1 tablespoon cilantro, chopped
1 tablespoon fresh basil, chopped
3 garlic cloves, minced
1/3 cup of olive oil
2 tablespoons balsamic vinegar
1 tomato, chopped
1 tablespoon capers
1/3 cup of red onion, chopped
salt and pepper
Makes 4 servings
Directions
1. Combine the balsamic vinegar, olive oil, and garlic cloves. Put the fillets on a baking dish and pour the oil and vinegar mixture over. Season with basil, cilantro, salt and pepper. Leave for 10 – 15 minutes.
2. Broil the salmon fillets for 12 – 15 minutes on both sides. Combine the capers, onion, olives, vinegar, and 1 – 2 tablespoons olive oil. Garnish with basil. Serve with the salmon fillets.
