4 salmon fillets
1 tablespoon cilantro, chopped
1 tablespoon fresh basil, chopped
3 garlic cloves, minced
1/3 cup of olive oil
2 tablespoons balsamic vinegar
1 tomato, chopped
1 tablespoon capers
1/3 cup of red onion, chopped
salt and pepper

Makes 4 servings


1. Combine the balsamic vinegar, olive oil, and garlic cloves. Put the fillets on a baking dish and pour the oil and vinegar mixture over. Season with basil, cilantro, salt and pepper. Leave for 10 15 minutes.

2. Broil the salmon fillets for 12 15 minutes on both sides. Combine the capers, onion, olives, vinegar, and 1 2 tablespoons olive oil. Garnish with basil. Serve with the salmon fillets.
