Potato Salad
500 grams potatoes
1 cup of red onion, sliced
1 red bell pepper, sliced
200 grams feta, crumbled
30 grams black olives
Fresh oregano
Basil leaves
1 tablespoon olive oil
Makes 4 servings
Directions
1. Preheat oil and sauté the onion for 2 – 3 minutes. Add pepper and oregano and simmer for 8 – 10 minutes.
2. Bring water to boil, add salt, and cook the potatoes until tender. Drain and cut into cubes.
3. Combine with the sauce and add the black olives. Garnish with basil and feta cheese and serve.
