1 avocado, halved, pitted, and cubed
1 garlic clove, minced
1 shallot, chopped
1 celery stalk, diced
the juice of 1 lemon
1 can of tuna
1 tablespoon mustard
4 tablespoons Paleo mayonnaise
1 tablespoon parsley, finely chopped
tablespoon Cayenne pepper
3 cups of leafy greens
salt and pepper

Makes 2 servings


1. Place the shallot, garlic, avocado, and celery in a large bowl. Drizzle with lemon juice, add salt and pepper, and Cayenne pepper and mix well. Combine the mayo and mustard and mix with the tuna.

2. Place the leafy greens in a bowl or plate, add the vegetables and put the tuna and mayo mix on top. Garnish with parsley and serve.
