4 tomatoes
2 cucumbers, sliced
2 red bell peppers, sliced
1 red onion, sliced
cup of sun-dried tomatoes, diced
1 cup of feta
15 black olives, pitted and sliced
2 tablespoons olive oil
2 tablespoons red wine vinegar
2 tablespoons oregano
1 handful fresh mint leaves
1 handful fresh dill
salt to taste

Makes 4 servings


1. Combine tomatoes, cucumbers, red bell peppers, onion, olives, and sun-dried tomatoes. Make sure you deseed the pepper.

2. Add the mint leaves and dill to the vegetables.

3. Mix the vinegar, salt, and olive oil to make the dressing. Pour over the vegetables.

4. Add the feta cheese and toss to combine. Garnish with a block of feta cheese. Drizzle with extra virgin olive oil and serve.
