Mediterranean Chicken Stew
500 grams chicken breast
3 garlic cloves, minced
3 tomatoes, cut
3 tablespoons olives
1 teaspoon white wine vinegar
1 carrot, chopped
3 tablespoons white wine
2 tablespoons fresh basil, chopped
1 celery stalk, chopped
1 can of chickpeas
3 tablespoons olive oil
1 cup of vegetable broth
Makes 4 servings
Directions
1. Season the chicken breast with salt and pepper. Preheat oil in a frying pan and cook chicken on both sides for 4 – 5 minutes.
2. Remove from the pan. Add the garlic, chickpeas, and ½ - 1 cup of water. Cook for 2 – 3 minutes. Add onions, celery, and carrots and cook for 6 – 7 minutes.
3. Add the chicken, tomatoes, wine, vinegar, olives, and vegetable broth. Simmer for 12 – 15 minutes and stir occasionally. Season with basil. Serve warm.
