Lentils Soup
2 garlic cloves, minced
2 celery stalks, diced
1 carrot, chopped
1 onion, diced
2 tablespoons olive oil
1 can of tomatoes, diced
1 liter vegetable broth
black pepper and salt to taste
1 1/3 cup of lentils
2 tablespoons olive oil
½ teaspoon ground toasted cumin
½ teaspoon ground coriander
Makes 6 servings
Directions
1. Heat the olive oil and add the onion, garlic, celery, and carrot. Cook for 5 – 6 minutes. Add the vegetable broth, lentils, cumin, coriander, salt and pepper. Bring to boil and simmer for 30 – 35 minutes. Stir regularly.
2. Add the canned tomatoes and simmer for 4 minutes. Blend in the food processor and serve warm.
