Creamy Walnut Soup
1 ½ cup of chopped walnuts
2 cups of water
1 cup of cream
1 cup of milk
1 tablespoon butter
½ cup of celery, chopped
1 onion, chopped
½ teaspoon paprika
½ teaspoon ginger
fresh parsley
Makes 4 servings
Directions
1. Combine water, walnuts, onion, celery, paprika, and ginger and simmer in a saucepan for 30 – 35 minutes. Leave to cool and process in the blender. Strain the mix.
2. Melt butter in a saucepan and add milk and the walnut mix. Stir in and add cream. Cook for 2 – 3 minutes. Garnish with fresh parsley and serve.
