1 cup of quinoa (mix, red, black, or white)
1 red onion, sliced
1 cup of cashews
1/3 cup of green onions, diced
1 cup of shredded carrots
1 cup of fresh peas
2 cups of water


1/3 cup of peanut butter
1 tablespoon olive oil
1 teaspoon sesame oil
2 teaspoons vinegar
2 teaspoons honey
2 teaspoons lemon juice
2 teaspoons grated lemon zest
salt to taste

Makes 4 servings


1. Pour water in a pot and cook the quinoa for about 20 minutes. Remove from heat. Cook the peas for 3 4 minutes in boiling water. Drain well.

2. Prepare the dressing. Heat the honey and peanut butter in the microwave for 30 seconds. Add the olive oil, sesame oil, and vinegar. Season with salt.

3. Leave to cool and add the grated lemon zest and lemon juice. Pour the dressing over the quinoa. Add the shredded carrots, peas, green onions, and red onion. Garnish with cashews and serve.
