Baked Rice Casserole
3 tablespoons vegetable oil
2 teaspoons parsley leaves
1 teaspoon basil leaves
1 teaspoon thyme leaves
1 package spinach
1 onion, minced
4 cups of cooked rice
2 cups of mushrooms
salt and pepper to taste
Makes 6 servings
Directions
1. Preheat 2 tablespoons of oil and sauté the mushrooms and onion for 6 – 7 minutes. Add the spinach and cook for 2 – 3 minutes. Add the basil, thyme, parsley, and rice to the mixture. Season with salt and pepper and mix well.
2. Pour in a casserole dish. Preheat oven to 180 °C and bake for 30 – 35 minutes. Serve hot.
