Almond and Chocolate Cake
1 cup of butter, melted or softened
5 eggs
2 cups of almond flour
1 cup of sugar substitute
½ tablespoon baking powder
1/3 cup of coconut flour
100 grams chocolate, melted
½ cup of heavy cream
1 teaspoon vanilla
½ cup of fresh orange juice
Makes 10 – 12 servings
Directions
1. Mix the eggs and sugar substitute and beat with a mixer, add almond and coconut flour, baking powder, and vanilla. Blend well. Add the orange juice, cream, chocolate, and butter and beat with the mixer.
2. Preheat the oven to 180 °C and bake for 35 – 40 minutes or until golden. Leave to cool and serve with fresh fruit (cherries or blueberries) and cream. Use unsalted butter.
