All Veggie Pizza
3 cups of flour
1 teaspoon salt
1 tablespoon olive oil
35 grams active dry yeast
1 tablespoon sugar
1 ½ cups of warm water
Topping
tomato sauce
2 garlic cloves
1 cup of cashews
1 cup of roasted tomatoes
fresh basil
200 grams mushrooms
1 red bell pepper, sliced
3 tablespoons red onion, sliced
2 tablespoons olive oil
Directions
1. Combine the yeast, sugar, and water in a large bowl and gently mix until bubbles appear. Let it set for 5 minutes and add the flour, salt, and oil. Mix well and form a soft dough.
2. Knead for 5 – 10 minutes and leave in a warm place, covered with a towel. Let it sit for 1 hour. Knead for 5 – 10 minutes and cover again with a towel for 50 minutes.
3. Preheat oil and sauté the garlic and onion. Add the mushrooms and red bell pepper and cook for 4 – 5 minutes. Remove from heat.
4. Roll the pizza dough to a circle and transfer to a baking sheet. Spread the tomato sauce evenly and place the cooked mushrooms, onion, garlic, and pepper on top. Add the roasted tomatoes. Preheat oven to 220 °C. Bake in the oven for 12 – 15 minutes and add the roasted cashews.
